Spices, herbs, and essential-oil plants provide a lot of marketable products, e.g., green mash, seeds, essential oils, etc. These raw materials find application in food industry, pharmacy, perfumery, traditional folk medicine, landscape gardening, The research objective was to test some new varieties spices, aromatic oil crops for their yield fatty acid composition.
 study featured medicinal hyssop (Hyssopus officinalis L.), oregano (Origanum vulgare basil (Ocimum basilicum tulsi tenuiflorum garlic chives (Allium odorum rue (Ruta graveolens blue fenugreek (Trigonella caerulea (L.) Ser.), big-root geranium (Geranium macrorrhizum L.). mass seeds studied on the experimental field Belarusian State Agricultural Academy according standard methods. A set laboratory procedures made it possible define content crude fat, while composition seed lipids by gas chromatography extracts methyl esters acids.
 150–280 c/ha, whereas 0.5–4.0 c/ha; fat 1.15–3.37 1.62–9.81%, respectively. included caprylic, palmitic, stearic, oleic, linoleic, α-linolenic acids. highest polyunsaturated acids represented linoleic observed (86.74–87.27%), (76.41–85.96%), (85.67%), (72.52–80.72%), (78.04%), (72.96%).
 specified provided complete assessment with prospect use as part functional products.
